The difference between these 2 categories are very easy to explain.
If you have a lot of I/O activity and I/O performance is very important, SSD is usually they way to go.
With SSD storage you have no I/O latency/delays, while SATA drives do have I/O latency and delays. But SSD storage is more expensive per GB compared to SATA storage.
If you mainly need a lot of (affordable) storage, servers with SATA storage are a good option.
